At Llàgrimes del Canigó, we produce infused olive oils artisanally and with 100% natural ingredients. In contrast, most brands produce aromatic olive oils, which are made by adding artificial flavors to olive oil.
But, what is the difference between the two? And why is it important to know?
What is infused olive oil?
An infused olive oil is obtained through an artisanal process in which extra virgin olive oil is infused with natural ingredients such as herbs, spices, mushrooms, or fruits in the same bottle, and left to rest for 2 to 3 months before being sold. A temperature between 10ºC and 25ºC is always maintained, and it is kept in a dark environment away from direct light. This process allows the olive oil to delicately absorb the aromas and flavors of these ingredients without altering its texture, quality, or properties.
The result is an extra virgin olive oil with natural and authentic nuances, ideal for enhancing your dishes without losing the essence of good olive oil.

What is aromatic olive oil?
In contrast, an aromatic olive oil is produced by simply adding essences or flavors, often synthetic, to the olive oil. These types of products are not infused with real ingredients, and are often made with low-quality olive oils, where artificial flavors mask the defects of the base product.
The result may be a strong, but unnatural, flavor, far from the experience offered by a true extra virgin olive oil infused with real ingredients.
