Our Story

CANIGOOIL was born in 2020, in the midst of the pandemic, when two young men, Jesús and Xavi —a lawyer and a graphic designer— decided to turn their lives around and embark on a project linked to the land, family, and the flavors of their surroundings.

The project started from Jesús' family olive oil tradition and the structure of Trull d’Agullana. From this basis, we wanted to recover a way of doing things closer to the origin: working with local producers, caring for each raw material, and creating honest, unique products with their own identity.

From the beginning, we were clear that we didn't want to limit ourselves to producing food. We wanted to tell where we come from, highlight our territory, and transform its ingredients into products capable of moving people and reaching any part of the world.


OUR ORIGIN: ARGUDELL OLIVE OIL

Our journey began with extra virgin olive oil. By learning more about the Argudell variety, a native olive from Empordà still little recognized outside our territory, we discovered a product with extraordinary value.

For years, Argudell had been in the background, and its cultivation was becoming increasingly limited. That's why we decided to make it one of the protagonists of CANIGOOIL, creating oils that would express its character, its aromas, and its close relationship with the Empordà landscape.

Over time, this commitment has led us to become part of the DOP Oli de l’Empordà, a recognition we are particularly proud of and which allows us to continue promoting and giving visibility to the oil produced in our land.

Under CANIGOOIL, we develop our extra virgin olive oils, with special attention to the Argudell variety, early harvests like our Oli del Raig, and the creation of oils with identity, origin, and personality.


THE BIRTH OF LLÀGRIMES DEL CANIGÓ

After our first steps with extra virgin olive oil, we wanted to explore new ways of working with this ingredient and bringing it closer to contemporary cuisine. This is how Llàgrimes del Canigó was born, the brand with which we develop our olive oil-based condiments and the rest of our gourmet specialties.

We began experimenting with natural ingredients, spices, aromatic herbs, and products from our surroundings. From this search, some of the products that have defined our trajectory were born, such as our chili, truffle, or porcini mushroom condiments.

These recipes allowed us to differentiate ourselves, open new markets, and build a recognizable brand, linked to creativity, the quality of ingredients, and a very personal way of understanding gastronomy.

Each product is born from a process of testing, selection, and refinement. We seek balanced combinations, intense flavors, and recipes capable of offering something different without losing the essence of the original ingredient.



MUCH MORE THAN OIL CONDIMENTS

Over the years, we understood that our way of working could go beyond olive oil-based condiments. In Girona and Empordà, there is enormous gastronomic richness, formed by small producers, traditional recipes, and raw materials with a strong connection to the territory.

That's why we decided to continue exploring products made in our area and reinterpret them under the gaze of Llàgrimes del Canigó. Currently, the brand encompasses olive oil-based condiments, sauces, vinegars, jams, and other gourmet specialties.

Our goal is to take products with history and give them our own touch: caring for their image, perfecting their flavors, and bringing them to people all over the world without losing their origin or authenticity.

Llàgrimes del Canigó will continue to grow as a brand open to new categories, new recipes, and new collaborations, always maintaining the values with which the project began: proximity, creativity, craftsmanship, and respect for the product.


PRODUCTS MADE OF EMOTIONS

CANIGOOIL is the expression of a single way of understanding gastronomy: respect for origin, care for ingredients, and the desire to create unique, honest, and personal products.

From Agullana, we continue to develop extra virgin olive oils, olive oil-based condiments, sauces, vinegars, jams, and other specialties capable of conveying the character of our land.

Our goal is to continue exploring new flavors and bring a small piece of Empordà to tables around the world.
