Artesania y Origen: Keeping Family Traditions Alive

CANIGOOIL was born in Agullana with the desire to recover the value of carefully crafted products, products with identity, and a way of working closely linked to their origin. Our story begins with a family tradition tied to olive oil and the old Trull d’Agullana, where previous generations already made oil using a stone mill.

Today, we combine that legacy with a contemporary perspective. We select raw materials, develop each recipe, and meticulously oversee the entire process to create gastronomic products with their own personality. We produce extra virgin olive oils, olive oil-based condiments, sauces, vinegars, jams, and other specialties designed to discover new flavors without losing the connection to their origin.

A HISTORY LINKED TO OLIVE OIL

Extra virgin olive oil was CANIGOOIL's starting point. We grew up surrounded by olive trees, the harvest, and a Mediterranean culture where oil is part of daily life.

Over time, we wanted to interpret this tradition from our own perspective: preserving the product's quality, but using modern methods that allow for better control of extraction and preservation of its organoleptic qualities.

Our work focuses particularly on the Argudell variety, an indigenous olive from Empordà that represents an essential part of our region's olive oil identity.


THE ARGUDELL VARIETY

The Argudell is a variety with character, traditionally cultivated in Empordà and still little known outside the region. When we started the project, we saw in it extraordinary value and an opportunity to contribute to its recognition.

With this variety, we produce different extra virgin olive oils. Among them is our Auream Argudell, certified by the DOP Oli de l’Empordà and made exclusively with Argudell olives cultivated and milled within the area protected by the designation.

This oil expresses the characteristic profile of the variety: a predominantly green fruitiness, with notes of fresh grass, tomato and tomato plant, nuances of banana and almond, and an elegant balance between bitter and spicy.

In addition to our oils certified by the DOP Oli de l’Empordà, CANIGOOIL produces and selects other extra virgin olive oils. Each one is presented according to its origin and characteristics, clearly differentiating those that are covered by the designation of origin.

CONTEMPORARY CRAFTSMANSHIP

For us, craftsmanship does not mean working as it was done in ancient times, but rather maintaining the same level of attention and respect for the product by applying current knowledge and technology.

We take care of every detail: the selection of the oil, the choice of ingredients, the balance of the recipes, the production times, and the final presentation. This approach allows us to develop consistent, recognizable products with their own identity.

Our way of working combines tradition, precision, and creativity. We start from recipes, ingredients, and flavors linked to Mediterranean culture to create preparations capable of fitting both everyday cooking and more contemporary gastronomic proposals.



BEYOND EXTRA VIRGIN OLIVE OIL

Oil was the origin of the project, but also the starting point for exploring new categories. From it, we began to create olive oil-based condiments with ingredients such as chili, truffle, porcini mushrooms, lemon, or basil.

These initial creations led to a broader universe of products. Currently, CANIGOOIL develops extra virgin olive oils, condiments, sauces, vinegars, jams and other gastronomic specialties.

We work on each category with the same philosophy: selecting good ingredients, finding combinations with personality, and offering products that bring something different to the table.


PRODUCTS WITH ORIGIN AND PERSONALITY

From Agullana, we continue to grow without straying from the values with which the project began: respect for the land, care for raw materials, creativity, and the desire to create products that evoke emotion.

Our goal is to highlight olive oil, the Argudell variety, and the gastronomic richness of our environment, while also exploring new recipes and ways to enjoy Mediterranean flavors.
